Merry Christmas!
I hope you’re happy and healthy and spending time with your nearest and dearest today. By the time you read this my family and I will have eaten what we have nearly every year on Christmas morning after opening presents: soft scrambled eggs, cooked over super low heat with a generous knob of butter and constantly stirred so they just come together and are custardy and tender with nary a curd; and waffles or pancakes, this year likely topped with salted cultured butter from the Camargue region in France for its tangy briny depth. Maybe we’ll top them with some hot honey for variety, and of course we’ll have lots and lots of bacon. I wrote about this last week and I will again because it’s important to our friends in the food service industry and to food culture throughout the West: Please do as much as you can to support your local restaurants around the holidays. They desperately need our help. While a pandemic relief bill is close to passing there’s still not nearly enough for this vast section of the economy to survive. Many restaurants that have been featured in Sunset and written about in this newsletter have closed or will close soon. So think about the restaurants you love. Maybe you had date night at one when that was a thing, or celebrated birthdays at them, or ordered midweek takeout when you were just too tired to cook. They nourished us. It’s time we nourished.
