I always wish there were some sort of magic food that had all of the richness and flavor I expect in December but less of the artery-clogging and blood-sugar spiking. I'd never found it before now, but Oakland, California's own Edgar Castrejón may have. His creative Mexican cooking is tasty, belly-filling—and completely vegan.
